&lt;p&gt;&lt;span&gt;Here’s a sneak preview of bodypainted swimmer &lt;strong&gt;Natalie Coughlin&lt;/strong&gt; in the 2012 Sports Illustrated Swimsuit issue (here’s the &lt;a href="http://www.si.com/swimsuit"&gt;&lt;span&gt;2011 Sports Illustrated Swimsuit issue&lt;/span&gt;&lt;/a&gt;) hitting newsstands, SI.com/Swimsuit, tablets and iPhones on Tuesday.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Along with LPGA golfer &lt;strong&gt;Natalie Gulbis&lt;/strong&gt; and soccer star &lt;strong&gt;Alex Morgan&lt;/strong&gt;, Coughlin posed nude — with the exception of carefully applied bodypaint.&lt;!-- more --&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;“It feels like something in between a swimsuit — and being naked,” says Coughlin about the bodypainting experience.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;a href="http://nataliecoughlin.com/"&gt;The three-time gold medalist&lt;/a&gt;&lt;/span&gt;&lt;span&gt; says she “jumped” at the chance to pose in bodypaint. It took 11 hours to apply, while Coughlin stood the whole time.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;“I wasn’t really nervous about that aspect of it at all. I was just so honored that they thought of me.”&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;She’s happy she posed for what she considers an “iconic” franchise. “It’s awesome to be able to say I have done a Swimsuit Issue. When I’m old and wrinkly and out of shape, I’ll be very, very proud of that.”&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;SI’s &lt;strong&gt;Jimmy Traina&lt;/strong&gt; &lt;a href="http://content.usatoday.com/communities/gameon/post/2012/02/alex-morgan-will-adorn-the-si-swimsuit-issue-in-bodypaint/1"&gt;&lt;span&gt;already unveiled preview pics of Morgan posing in bodypaint&lt;/span&gt;&lt;/a&gt;.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Coughlin says she hopes more female athletes pose for the issue, which is read by 70 million adults.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;“As beautiful as the supermodels are, I think it’s great to have different types of bodies,” she says. “To have an athletic body in SI Swimsuit Issue, I think, is really important. SI is a sports magazine in the first place. So it’s nice to have balance between models and athletes.”&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;strong&gt;Kate Upton &lt;/strong&gt;was unveiled as cover model during a taping of CBS’ &lt;em&gt;The Late Show with David Letterman &lt;/em&gt;in New York on Monday night. &lt;a href="http://content.usatoday.com/communities/gameon/post/2012/02/kate-upton-unveiled-as-cover-model-for-si-swimsuit-issue-sports-illustrated-swimsuit-issue-david-letterman-cbs-2012/1"&gt;&lt;span&gt;This year’s issue&lt;/span&gt;&lt;/a&gt; will feature 18 models and three male athletes: Olympic swimmer &lt;strong&gt;Michael Phelps&lt;/strong&gt;, NBA star &lt;strong&gt;Chris Paul&lt;/strong&gt;; and tennis star &lt;strong&gt;Rafael Nadal&lt;/strong&gt;.&lt;/span&gt;&lt;/p&gt;

Lumpia with Dried Plum Purée

&lt;p&gt;&lt;strong&gt;&lt;span&gt;&lt;strong&gt;Lumpia with Dried Plum Purée&lt;/strong&gt;&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt; &lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;These are a perfect appetizer. My Grandma’s recipe, altered a slight bit to add extra nutrition from the dried plums. Yum.&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 pound ground pork&lt;br/&gt; 1 (8-ounce) can water chestnuts, drained and chopped&lt;br/&gt; 3/4 cup minced onion&lt;br/&gt; 1/4 cup California dried plum purée&lt;br/&gt; 2 tablespoons reduced-sodium soy sauce&lt;br/&gt; 1 tablespoon minced garlic&lt;br/&gt; 1 teaspoon salt&lt;br/&gt; 1 teaspoon white pepper&lt;br/&gt; 1 tablespoon flour&lt;br/&gt; 1 tablespoon water&lt;br/&gt; 24 lumpia wrappers&lt;br/&gt; Cooking spray&lt;br/&gt; Dried Plum-Chili Dipping Sauce (recipe below)&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;strong&gt;Directions&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Mix together pork, water chestnuts, onion, dried plum purée, soy sauce, garlic, salt and pepper. In a small bowl, mix flour and water to make a paste.&lt;br/&gt;&lt;br/&gt; Place one lumpia wrapper on a work surface and place about 2 tablespoons pork mixture near the edge closest to you. Roll bottom edge towards the middle, fold in both sides and continue rolling. Moisten edge with flour paste to seal. Repeat with remaining wrappers and filling. &lt;br/&gt;&lt;br/&gt; Heat oven to 425°F. Spray a baking sheet with cooking spray. Arrange lumpia on baking sheet and spray with cooking spray. &lt;p&gt;&lt;strong&gt;The format of 2011 Duel in the Pool:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;The competition will have 15 men’s and 15 women’s events, which will include 13 individual races and two relays for each gender.  A running score will be kept combining the points earned by both women and men.  The winning team will be the team with the most combined team points at the end of the competition.  As there are 131 points available in the 15 total events (men &amp; women, respectively), the first team to 66 points would be the winner. Team scores will be broken down by Women, Men and Overall team scores.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Scoring in individual events is 5-3-1, scoring in relay events is 7-0. &lt;/span&gt;&lt;/p&gt;
&lt;p&gt;The course for the competition will be 25 meters (short course).  The order of events is as follows:&lt;/p&gt;

&lt;p&gt;1 (1-pound) loaf country-style French bread&lt;br/&gt;1 pound cornbread&lt;br/&gt;1/4 cup vegetable oil&lt;br/&gt;2 cups diced celery&lt;br/&gt;1 cup diced onion&lt;br/&gt;1 tablespoon chopped fresh rosemary&lt;br/&gt;2 cups halved California pitted dried plums&lt;br/&gt;2 cups pecan halves&lt;br/&gt;1/4 cup chopped parsley&lt;br/&gt;4 cups turkey broth, fat-free low sodium chicken broth, or vegetable broth&lt;br/&gt;Salt and black pepper&lt;/p&gt;
&lt;h3&gt;Directions&lt;/h3&gt;
&lt;p&gt;Cut French bread and cornbread into 1-inch cubes; spread on baking pans and leave to dry out overnight. &lt;br/&gt;&lt;br/&gt;Heat oven to 350°F. In a large skillet, heat oil over medium heat. Add celery, onion and rosemary. Cook, stirring occasionally, about 5 minutes or until vegetables are soft. &lt;br/&gt;&lt;br/&gt;In a large bowl, combine bread cubes, vegetables, dried plums, pecans and parsley. Add broth and mix gently but thoroughly; season with salt and pepper. Transfer to a 4-quart shallow ovenproof baking dish; cover loosely with a sheet of foil. Bake 30 minutes; remove foil and bake 15 to 20 minutes more or until top is browned.&lt;/p&gt;

&lt;p&gt;NEW YORK (AP) - Chasing her third Olympics, &lt;strong&gt;&lt;a href="http://www.universalsports.com/swimming/athletes/athlete=556/index.html"&gt;Natalie Coughlin&lt;/a&gt;&lt;/strong&gt; isn’t sure the trend of making the games over and over will become routine in swimming.&lt;/p&gt;
&lt;p&gt;Michael Phelps is going for his fourth, Ryan Lochte his third. Dara Torres, Ian Thorpe, Janet Evans, Amanda Beard - everyone in the sport seems to be shattering the assumption that the Olympics are a once-in-a-lifetime opportunity.&lt;/p&gt;
&lt;p&gt;“I think this is a special moment in time in swimming,” Coughlin told The Associated Press on Thursday. “Yes, there are several of us that have been to many Olympics. We’re kind of at that sweet spot where there are more opportunities now for people after college and people physically are figuring out how to keep injury away. At the same time, I think it’s kind of a coincidence that there are so many people who are doing well.”&lt;!-- more --&gt;&lt;/p&gt;
&lt;p&gt;The 11-time Olympic medalist just got back from competing in Italy, and the London Games must be right around the corner because she’s feeling that urge to race. The 29-year-old Coughlin took more than a year off after Beijing, a much-needed break from essentially two straight decades of swimming.&lt;/p&gt;
&lt;p&gt;She returned to the pool to prepare for this past summer’s world championships. At the time, she didn’t realize that her motivation wasn’t totally there.&lt;/p&gt;
&lt;p&gt;“It’s not like I was lazy the past couple years,” she said with a laugh. “I just think that mentally it’s so difficult to stay at that level for so long.”&lt;/p&gt;
&lt;p&gt;She noticed the difference when she looked at her competition schedule for this year versus last. Between now and next summer, her calendar is packed. Before, she wanted to race only if it doubled as a nice vacation to somewhere like Italy or Japan.&lt;/p&gt;
&lt;p&gt;Coughlin won three medals at worlds in July, including bronze in the 100-meter backstroke and gold in an American-record time with the U.S. medley relay team.&lt;/p&gt;
&lt;p&gt;“Now that it’s the Olympic year, I can honestly say I’m really excited about training; I’m really excited about competition, and I’m fully in this now,” she said.&lt;/p&gt;
&lt;p&gt;In 2008, Coughlin became the first American woman to win six medals in one Olympics. As a swimmer with strong technique, she believes she benefits from the restrictions enacted by governing body FINA on high-tech suits at the start of last year.&lt;/p&gt;
&lt;p&gt;“I think there were a lot of swimmers out there that were just sheer power, and the suits were helping them more than they were helping the technical (swimmers),” she said.&lt;/p&gt;
&lt;p&gt;Coughlin is training in all four strokes, unsure which events will feel the best come trials. Despite her versatility, Coughlin has never tried to be the female Phelps. She swam the butterfly often in college, but she never sought to race the 100 fly at the Olympics because it was scheduled too close to the event in which she’s won two gold medals, the 100 back.&lt;/p&gt;
&lt;p&gt;Now that there’s more time between the two races, Coughlin might add the 100 fly in London, especially after the stroke felt strong when she won bronze in the 200 individual medley in Beijing.&lt;/p&gt;
&lt;p&gt;“I felt like I never really reached my potential in the butterfly,” she said.&lt;/p&gt;
&lt;p&gt;But as Coughlin learned in 2008, it’s hard to predict which races will just feel right. Take the chain of events that put her on the podium in an unlikely event.&lt;/p&gt;
&lt;p&gt;“I honest to God did not think I was going to do the IM,” she said. “I just did it kind of as a joke once at a meet, and then I happened to drop four seconds. Then I did it again because I was so close to the American record - and I broke the American record. Then I was like, ‘Oh, God, now I’m going to have to try and do this at trials.’ Then I didn’t think I was going to qualify, and I did.&lt;/p&gt;
&lt;p&gt;“And then I got a bronze medal.”&lt;/p&gt;

&lt;p&gt;One conspicuous absence outside Natalie Coughlin’s house: a pool.&lt;/p&gt;
&lt;p&gt;“How do you have fun at a pool?” asked Coughlin, half joking, one day while drinking tea in her kitchen in Lafayette. The house was unusually quiet. Its other three inhabitants - Coughlin’s husband, swim coach Ethan Hall; SheRa, her 7- year-old border terrier; and Dozer, their American bulldog, were out on a walk.&lt;/p&gt;
&lt;p&gt;“I don’t know what to do at a pool,” she said. “Most swimmers don’t. If we go to a rec pool, all I want to do is lie by it.”&lt;/p&gt;
&lt;p&gt;Coughlin is the most decorated American women’s swimmer in modern Olympic history. She began swimming at age 6 to meet friends after her parents moved, and at age 15, she became the first swimmer to qualify for all 14 events in the Summer National. In the 2008 Summer Olympic games in Beijing, she became the first woman to win six medals in a single Olympics.&lt;/p&gt;
&lt;p&gt;&lt;!-- more --&gt;Coughlin, 29, began training in January 2010 for the 2012 Summer Games, to be held in London, which means a rigorous schedule of six-hour training days. She starts early - sometimes waking at 4:30 a.m. - which means she’s home by 3:30 p.m., ready to relax: cook, garden, eat and hang out with her husband and the dogs.&lt;/p&gt;
&lt;p&gt;When Hall returned from a dog walk, Coughlin went to meet him outside, passing a towel that hung on the gate that read “Soggy Dog.” It was covered, fittingly, in dog slobber. Seeing her, Dozer - “as in ‘bulldozer,’ and he stays true to his name,” Coughlin says - heaved his 110 pounds out of the car and bolted down the walkway, lips everywhere.&lt;/p&gt;
&lt;p&gt;“Keep your knees bent around him,” Coughlin cautioned, deadly serious.&lt;/p&gt;
&lt;p&gt;Surprisingly, when asked to pick out her most meaningful objects, she sidelined her Olympic medals, which she keeps folded neatly into two makeup cases, locked in a safe. When prompted, she laid them out on the table - 11 in all. The image was magnificent and overwhelming, but Coughlin is reluctant to display them in her home.&lt;/p&gt;
&lt;p&gt;“They represent two decades of training, but I know I have them,” she said. “I don’t need a daily reminder.”&lt;/p&gt;

NATALIE Coughlin completed a strong two-day outing in Italy at the International Swim Meeting in Bolzano. &lt;br/&gt;&lt;br/&gt;Coughlin began the day with a win in the women’s 100 fly with a 56.97. That swim pushed her to fifth in the world rankings in the event. Italy’s Elena Di Liddo placed second in 59.32, while Germany’s Sina Sutter earned third in 1:00.21. Coughlin followed that up with her fourth title of the meet with a 24.50 in the women’s 50 free. She jumped to 12th in the rankings with that performance. Germany’s Dorothea Brandt took second in 24.99, while Italy’s Erica Buratto touched third in 25.36. &lt;br/&gt;&lt;!-- more --&gt;&lt;br/&gt;USA’s Nick Thoman tied for ninth in the world rankings with a 24.24 to win the men’s 50 back. USA’s Randall Bal, representing a Brazilian club, took second in 24.46. USA’s Adam Mania wrapped up third in 24.68. Italy’s Laura Letrari captured the women’s 50 back crown in 27.99, while Canada’s Sinead Russell touched second in 28.34. Di Liddo podiumed for the second time tonight with a third-place 28.54. &lt;br/&gt;&lt;br/&gt;USA’s Tyler McGill claimed the men’s 100 fly in 52.14, while Italy’s Lorenzo Benatti (53.52) and Piero Codia (53.83) rounded out the top three. Italy’s Marco Orsi clocked a 22.06 for the men’s 50 free title, while USA’s Cullen Jones took second in 22.20. Italy’s Federico Bocchia placed third in 22.30. &lt;br/&gt;&lt;br/&gt;Italy’s Lisa Fissneider snared the women’s 100 breast title in 1:08.33, while Germany’s Dorothea Brandt took second in 1:08.55. Compatriot Caroline Ruhnau posted a third-place 1:08.97 to tie Italy’s Chiara Boggiatto. Italy’s Fabio Scozzoli won the men’s 100 breast in 59.32, while USA’s Mark Gangloff earned second in 59.93. IT was a banner first day of short course meter racing for Natalie Coughlin at the International Swim Meeting held in Bolzano, Italy. &lt;br/&gt;&lt;br/&gt;Coughlin started off the day with a 52.94 to win the women’s 100 free, short of her eighth-ranked season best of 52.80 from Genova earlier in the week. She then rattled the American record in the women’s 100 IM, which Coughlin has said is her favorite event. Coughlin won the sprint medley with a time of 58.72. That time just missed Ariana Kukors’ American record of 58.65 from the semifinals of the World Short Course Championships in Dubai in 2010. The time did clip Fran Halsall’s 58.73 for the top ranking in the world this year, and bettered Coughlin’s lifetime best of 58.80 from back in 2003. She moved to eighth on the all-time rankings with the performance. &lt;br/&gt;&lt;!-- more --&gt;&lt;br/&gt;Canada’s Sinead Russell (55.09) and USA’s Kim Vandenberg (55.21) finished second and third in the 100 free, while Italy’s Laura Letrari (1:01.34) and Erica Buratto (1:02.10) made up the rest of the podium in Coughlin’s big 100 IM finale. &lt;/p&gt;
&lt;p&gt;Italy’s Marco Orsi won the men’s 100 free in 48.92, while USA’s Cullen Jones finished second in 48.95. Italy’s Federico Bocchia earned third in 48.96. Germany’s Markus Deibler topped the men’s 100 IM in 53.65. Italy’s Fabio Scozzoli (54.72) and Orsi (54.72) wound up second and third in the event. &lt;br/&gt;&lt;br/&gt;Germany’s Dorothea Brandt claimed the women’s 50 breast title in 30.96, while Italy’s Lisa Fissneider took second in 31.68. Germany’s Caroline Ruhnau placed third in 31.84. Scozzoli, who owns the top time in the world this year with a 26.11 from August, won the men’s 50 breast in 26.68. USA’s Mark Gangloff (27.51) and Deibler (28.03) earned second and third. &lt;br/&gt;&lt;br/&gt;Russell cruised to victory in the women’s 100 back with a 58.96, while Italy’s Carlotta Zofkova (1:00.63) and Alessia Polieri (1:00.70) rounded out the podium. USA’s Nick Thoman captured the men’s 100 back title in 52.07. USA’s Randall Bal, representing a Brazilian club, finished second in 52.68.
